Mojo Pollo Asado with El Havanero™ (heat 9)

Chicken thighs marinated in mojo criollo, grilled, and finished with El Havanero™ (habanero and tomato) at the table.

Prep: 15 min Cook: 25 min Serves: 4 Difficulty: Easy

Ingredients

  • 8 bone-in chicken thighs
  • 1 cup mojo criollo (recipe on this site)
  • 3 tbsp Barbaro Mojo El Havanero™, divided
  • 1 tsp ground cumin
  • Salt and black pepper

Instructions

  1. Marinate the chicken in the mojo criollo with the cumin, covered, 4 to 12 hours in the refrigerator.
  2. Grill over medium heat, skin side down first, about 12 minutes per side, until the thickest part reads 175°F. Brush with 1 tbsp of El Havanero™ in the last 3 minutes only.
  3. Rest 5 minutes and serve with the rest of the El Havanero™ on the side, with white rice and black beans.
Want it hotter? A teaspoon of Matanza™ in the marinade takes it to a 10 without changing the flavor.

Piñazo™ Shrimp and Pineapple Skewers (heat 6)

Shrimp and fresh pineapple on the grill, glazed with Piñazo™ (pineapple and Carolina Reaper). Sweet, then the punch.

Prep: 15 min Cook: 6 min Serves: 4 Difficulty: Easy

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/3 cup Barbaro Mojo Piñazo™
  • 1 cup fresh pineapple, in 1-inch chunks
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • Salt, cilantro

Instructions

  1. Mix the Piñazo™, lime juice, olive oil, cumin, and a pinch of salt. Toss with the shrimp and marinate 15 minutes, no longer.
  2. Thread the shrimp and pineapple alternately onto skewers.
  3. Grill over high heat 2 to 3 minutes per side, until the shrimp are pink and the pineapple has grill marks. Finish with cilantro and a little more Piñazo™.
For a milder table, serve with Jalabáo™ (3) on the side instead of extra Piñazo™.

Matanza™ Wings (heat 10)

Grilled wings tossed in a butter and Matanza™ (habanero and Carolina Reaper) sauce. The only 10 on the menu.

Prep: 10 min Cook: 35 min Serves: 2 Difficulty: Medium

Ingredients

  • 2 lbs chicken wings
  • 1/4 cup Barbaro Mojo Matanza™
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp brown sugar
  • Salt

Instructions

  1. Pat the wings dry, salt them, and grill over medium-high heat, turning every 5 minutes, about 30 minutes until crisp and cooked through (175°F).
  2. Whisk the Matanza™, melted butter, garlic powder, and brown sugar together.
  3. Toss the hot wings in the sauce and serve at once, with something cold to drink and a bowl of Jalabáo™ for anyone who tapped out.
Toss the wings after grilling, not before: the butter and sugar burn over direct flame.
